What is a Honey Tart? Well, it's not a tart filled with just honey, it's usually a fruit tart that has honey drizzled on top of it. Here are some recipes I've found that are 'Honey Tarts'.

+ Honey Tart +

9 tablespoons honey
225 g premade puff pastry
100 g bread cumbs
1 grated orange rinds
100 g pine nuts
200 mL fresh cream

Makes: 4 servings, 30 minutes
1) Roll out puff pastry and use it to line a 15-20 cm loose-bottomed flan tin.
2) Trim the edges neatly and prick the base all over with a fork.
3) Dip a spoon in hot water and measure out 7 tbsp of honey.
4) Stir in breadcrumbs, orange rind and pine nuts and transfer to the pastry case.
5) Bake it in a preheated oven for 25 min at 190 degree C.
6) Serve warm with the remaining honey drizzled over the top and fresh cream.

+ Apple Honey Tart +

1/4 cup honey
4 apples
3 teaspoons cinnamon
1 orange or lemon
2 tablespoons butter
8 phyllo pastry sheets
Makes: 1 8x8 pan
1) Core and dice apples into 1-inch pieces. Toss with 2 teaspoons of cinnamon.
2) Melt butter in saucepan. Brush butter on the bottom of a 9-inch square pan. Fold 1 phyllo layer in half and put into the bottom of the cake pan. Brush butter on the layer and continue until 4 sheets have been used. Place apples in the pan next and then continue layering using the last 4 sheets of pastry.
3) Bake at 325 for 30 minutes. In the same saucepan add honey, cinnamon and juice of orange or lemon to the leftover butter if any. Heat to melt the honey. When tart is nicely browned on top, remove from oven and score the top pastry in diamond shapes. Pour honey mixture over top and let cool.

+ Strawberry Honey Tart +

1/3 cup honey
1 tablespoon lemon juice
1 9-inch pie shell
1 orange or lemon
4 cups halved strawberries
mint sprigs (optional)
Makes: 8 servings
1) Combine honey and lemon juice in small bowl; mix well.
2) Brush bottom of pie shell with some of the honey mixture.
3) Fill shell with strawberries and drizzle remaining honey mixture over berries. Garnish with mint sprigs, if desired.
